Pumpkin Streusel Loaf

Makes 5 (5-inch) loaves

 

Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup firmly packed brown sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 (15 ounce) can pumpkin
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon salt
  • ¾ cup buttermilk 
  • Oatmeal Streusel (recipe follows)

 

Steps 

  1. Preheat the oven to 350 degrees. Spray 5 (5×3-inch) loaf pans with nonstick baking spray with flour. 
  2. In a large bowl, beat butter and the next three ingredients at medium speed with a mixer until fluffy. Add eggs, one at a time. Lastly, stir in pumpkin. 
  3. In a medium bowl, combine the flour with the next four ingredients. Then, add to butter mixture, alternately with buttermilk, beginning and ending with flour mixture until combined after each addition. 
  4. Bake for around 30 minutes. Let bread cool in the pan for ten minutes and then remove the loaves from pans placing them on wire racks. 

 

Oatmeal Streusel

Makes about one cup

Ingredients

  • ¼ cup quick-cooking oats
  • ¼ cupe all-purpose flour
  • ¼ cup firmly packed brown sugar
  • 1 teaspoon of ground cinnamon
  • ¼ cup butter, cut into pats

 

Streusel

  1. In a small bowl, combine ¼ cup quick-cooking oats, ¼ cupe all-purpose flour, ¼ cup firmly packed brown sugar, and 1 teaspoon of ground cinnamon. Using a pastry blender, cut in butter until your mixture is crumbly.
